Aloo Gobi
Aloo Gobi is a popular vegetarian dish in Indian cuisine made with potatoes (aloo) and cauliflower (gobi), cooked with a variety of aromatic spices. It’s often enjoyed as a side dish with roti or rice. Here’s a basic recipe to prepare it:
Ingredients:
- 2 medium potatoes (peeled and cut into cubes)
- 1 medium cauliflower (cut into florets)
- 1 medium onion (finely chopped)
- 2 tomatoes (chopped)
- 1-2 green chilies (slit, optional)
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves (for garnish)
- 2-3 tbsp oil

Instructions:
- Heat oil in a large pan over medium heat. Add cumin seeds and allow them to splutter.
- Add onions and sauté until they turn golden brown. Then, add ginger-garlic paste and cook for another minute.
- Add chopped tomatoes and cook until they soften and oil starts to separate from the masala.
- Add the spices: turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 2 minutes.
- Add potatoes and cauliflower to the pan. Mix gently so the vegetables are coated with the spices.
- Add about 1/4 cup of water, cover the pan, and cook on low to medium heat for 10-15 minutes, stirring occasionally, until the potatoes and cauliflower are tender.
- Once the vegetables are cooked, sprinkle garam masala and stir gently.
- Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
This dish is aromatic, flavorful, and comforting, with the potatoes absorbing the spices while the cauliflower adds a tender texture.
