Aloo Gobi

Aloo Gobi is a popular vegetarian dish in Indian cuisine made with potatoes (aloo) and cauliflower (gobi), cooked with a variety of aromatic spices. It’s often enjoyed as a side dish with roti or rice. Here’s a basic recipe to prepare it:

Ingredients:

  • 2 medium potatoes (peeled and cut into cubes)
  • 1 medium cauliflower (cut into florets)
  • 1 medium onion (finely chopped)
  • 2 tomatoes (chopped)
  • 1-2 green chilies (slit, optional)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 2-3 tbsp oil

Instructions:

  1. Heat oil in a large pan over medium heat. Add cumin seeds and allow them to splutter.
  2. Add onions and sauté until they turn golden brown. Then, add ginger-garlic paste and cook for another minute.
  3. Add chopped tomatoes and cook until they soften and oil starts to separate from the masala.
  4. Add the spices: turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for 2 minutes.
  5. Add potatoes and cauliflower to the pan. Mix gently so the vegetables are coated with the spices.
  6. Add about 1/4 cup of water, cover the pan, and cook on low to medium heat for 10-15 minutes, stirring occasionally, until the potatoes and cauliflower are tender.
  7. Once the vegetables are cooked, sprinkle garam masala and stir gently.
  8. Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.

This dish is aromatic, flavorful, and comforting, with the potatoes absorbing the spices while the cauliflower adds a tender texture.
