Ingredients:

For the dough:

  • 2 cups all-purpose flour (maida)
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 tbsp yogurt
  • 2 tbsp oil or ghee
  • Warm water (as needed to knead the dough)

For the filling:

  • 2 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped (optional)
  • 1-2 green chilies, finely chopped
  • 1 tsp ginger, grated
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves, chopped

  • Ghee or butter for brushing

Instructions:

  1. Prepare the dough:
    • In a large bowl, mix the flour, sugar, salt, and baking powder.
    • Add the yogurt, oil, and a little warm water to form a soft dough. Knead well for about 5-7 minutes.
    • Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. Prepare the filling:
    • Heat a little oil in a pan and sauté the cumin seeds. Add the chopped onions (if using) and cook until soft.
    • Add the ginger, green chilies, red chili powder, garam masala, and salt. Stir well.
    • Add the boiled and mashed potatoes, and cook for a couple of minutes, ensuring all the spices are mixed in.
    • Remove from heat and let it cool. Once cooled, mix in the chopped coriander leaves.
  3. Assemble the Kulcha:
    • Divide the dough into small balls (about the size of a golf ball).
    • Flatten each dough ball into a small disc and place a spoonful of the prepared potato filling in the center.
    • Gently seal the edges of the dough around the filling and roll it out again into a round, flatbread shape, being careful not to let the filling escape.
  4. Cook the Kulcha:
    • Heat a tawa or griddle on medium heat.
    • Place the kulcha on the hot tawa and cook until bubbles form on the surface. Flip it and cook the other side.
    • Once both sides are lightly golden, apply a little ghee or butter on both sides and cook for an additional minute, pressing gently with a cloth or spatula to ensure even cooking.
  5. Serve:
    • Serve hot with yogurt, pickle, or any curry of your choice.
