Aloo Kulcha
Aloo Kulcha is a popular North Indian flatbread stuffed with a spiced mashed potato filling. It’s typically served with yogurt, pickles, and curry dishes. Here’s how you can make it:
Ingredients:
For the dough:
- 2 cups all-purpose flour (maida)
- 1 tsp sugar
- 1 tsp salt
- 1 tsp baking powder
- 2 tbsp yogurt
- 2 tbsp oil or ghee
- Warm water (as needed to knead the dough)
For the filling:
- 2 medium-sized potatoes, boiled and mashed
- 1 small onion, finely chopped (optional)
- 1-2 green chilies, finely chopped
- 1 tsp ginger, grated
- 1 tsp cumin seeds
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- Salt to taste
- Fresh coriander leaves, chopped
For cooking:
- Ghee or butter for brushing

Instructions:
- Prepare the dough:
- In a large bowl, mix the flour, sugar, salt, and baking powder.
- Add the yogurt, oil, and a little warm water to form a soft dough. Knead well for about 5-7 minutes.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Prepare the filling:
- Heat a little oil in a pan and sauté the cumin seeds. Add the chopped onions (if using) and cook until soft.
- Add the ginger, green chilies, red chili powder, garam masala, and salt. Stir well.
- Add the boiled and mashed potatoes, and cook for a couple of minutes, ensuring all the spices are mixed in.
- Remove from heat and let it cool. Once cooled, mix in the chopped coriander leaves.
- Assemble the Kulcha:
- Divide the dough into small balls (about the size of a golf ball).
- Flatten each dough ball into a small disc and place a spoonful of the prepared potato filling in the center.
- Gently seal the edges of the dough around the filling and roll it out again into a round, flatbread shape, being careful not to let the filling escape.
- Cook the Kulcha:
- Heat a tawa or griddle on medium heat.
- Place the kulcha on the hot tawa and cook until bubbles form on the surface. Flip it and cook the other side.
- Once both sides are lightly golden, apply a little ghee or butter on both sides and cook for an additional minute, pressing gently with a cloth or spatula to ensure even cooking.
- Serve:
- Serve hot with yogurt, pickle, or any curry of your choice.
Enjoy your delicious Aloo Kulcha!
