Aloo Shimla Mirch

Ingredients:
- 2 medium-sized potatoes (peeled and cubed)
- 2 large bell peppers (shimla mirch), chopped into pieces
- 1 onion (finely chopped)
- 1-2 green chilies (optional)
- 1-2 tomatoes (finely chopped)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder (adjust to taste)
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish

Instructions:
- Heat oil in a pan or wok. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the green chilies and tomatoes and cook until the tomatoes soften and the oil starts to separate.
- Add the turmeric powder, coriander powder, red chili powder, and salt. Stir well to mix the spices.
- Add the potatoes and sauté for a few minutes to coat them with the spices.
- Add the shimla mirch (bell peppers) and mix everything well.
- Cover and cook on medium heat for about 10-15 minutes, stirring occasionally, until the potatoes are tender and the bell peppers are cooked but still slightly crunchy.
- Once done, garnish with fresh coriander leaves.
Serve the Aloo Shimla Mirch with roti, paratha, or rice. It’s a quick, healthy, and tasty dish!
