Aloo Tikki
Aloo Tikki is a popular Indian snack made from mashed potatoes mixed with spices, shaped into patties, and then shallow-fried until crispy and golden. It is often served with chutneys like tamarind or mint chutney and is a favorite street food.
Ingredients:
- 4 medium potatoes (boiled and mashed)
- 1 small onion (finely chopped)
- 2-3 green chilies (finely chopped, optional)
- 1/4 cup fresh coriander leaves (chopped)
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- 1 tbsp cornflour or rice flour (for binding)
- Oil for shallow frying

Instructions:
- Prepare the potatoes: Boil the potatoes until soft. Peel and mash them while they are still warm.
- Spice the mixture: In a large mixing bowl, add the mashed potatoes, chopped onion, green chilies, coriander leaves, cumin seeds, garam masala, red chili powder, turmeric powder, coriander powder, and salt. Mix everything together until well combined.
- Bind the mixture: Add cornflour or rice flour to help the mixture bind together. This will prevent the tikkis from falling apart while frying. You can adjust the amount depending on the consistency of the mashed potatoes.
- Shape the tikkis: Take small portions of the mixture and shape them into flat, round patties. You can make them as thick or thin as you like.
- Shallow fry: Heat a little oil in a non-stick pan over medium heat. Once the oil is hot, carefully place the tikkis in the pan. Fry them on each side for 3-4 minutes, or until they are golden and crispy.
- Serve: Once fried, remove the tikkis from the pan and drain on paper towels to remove excess oil. Serve hot with chutneys (like tamarind, mint, or yogurt), or as a part of a chaat (street food salad).
Tips:
- To make them crispier, you can also deep-fry the tikkis.
- You can stuff the tikkis with a filling like spiced peas, paneer, or even cheese for added flavor.
- Aloo Tikki can also be used in sandwiches or as a topping for chaat dishes like ragda pattice.
