Chole Bhature is a classic North Indian dish that combines spicy chickpeas (chole) with deep-fried bread (bhature). It’s often enjoyed as a hearty breakfast or lunch and is packed with flavors. Here’s how you can make it at home:


Ingredients

For Chole (Chickpeas)

  • 1 cup dried chickpeas (or 1 can of chickpeas, drained and rinsed)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped or pureed
  • 2-3 green chilies, chopped
  • 1-inch ginger, grated
  • 3-4 garlic cloves, minced
  • 3 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1-2 bay leaves
  • 1 black cardamom pod
  • 2-3 cloves
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp amchur (dry mango powder) or lemon juice
  • Salt to taste
  • Fresh coriander leaves for garnish

For Bhature (Fried Bread)

  • 2 cups all-purpose flour
  • 1/4 cup semolina (optional, for added texture)
  • 1/2 cup yogurt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp sugar
  • Salt to taste
  • Water, as needed
  • Oil for frying

Instructions

To Make Chole

  1. Soak and cook chickpeas: Soak the dried chickpeas overnight. In the morning, drain and cook them in a pressure cooker with water and a pinch of salt until soft. If using canned chickpeas, simply drain and rinse them.
  2. Prepare the masala base:
  • Heat oil in a pan over medium heat. Add cumin seeds, bay leaves, black cardamom, and cloves. Let them sizzle for a few seconds.
  • Add chopped onions and sauté until golden brown.
  • Add ginger, garlic, and green chilies. Cook until fragrant.
  1. Cook with tomatoes and spices:
  • Add the tomatoes and cook until they soften and the oil begins to separate.
  • Add turmeric, coriander powder, ground cumin, red chili powder, and salt. Stir well and cook for 3-5 minutes.
  1. Simmer the chole:
  • Add the cooked chickpeas and mix well. Add about a cup of water (more if you prefer a thinner consistency).
  • Cover and let it simmer for about 15-20 minutes, allowing the flavors to meld.
  1. Finish with spices:
  • Add garam masala and amchur powder or a splash of lemon juice. Garnish with fresh coriander leaves.

To Make Bhature

  1. Prepare the dough:
  • In a mixing bowl, combine flour, semolina, baking powder, baking soda, sugar, and salt. Mix well.
  • Add yogurt and knead to form a soft dough. Add a little water if needed, but be careful not to make it sticky.
  • Cover the dough and let it rest for at least 1 hour.
  1. Roll and fry the bhature:
  • After the dough has rested, divide it into small portions and roll each portion into a ball.
  • Roll each ball into a circle, about 6 inches in diameter, keeping it slightly thick.
  • Heat oil in a deep frying pan. Fry each bhature until golden brown and puffy. Drain on paper towels.

Serve

Serve the hot, spicy chole with fluffy bhature. Accompany with sliced onions, green chilies, and a wedge of lemon for extra zing.
