Dum Aloo
Dum Aloo is a delicious and flavorful potato-based curry dish, popular in North Indian and Kashmiri cuisine. Potatoes are cooked slowly (or “dum”) in a rich, spicy gravy, resulting in tender potatoes that soak up the flavorful sauce. Here’s a basic recipe for Dum Aloo:
Ingredients
- 12-15 small baby potatoes (or medium potatoes, peeled and cubed)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1/2 cup plain yogurt, whisked
- 2-3 green chilies, slit
- 1-inch ginger piece, grated
- 3-4 garlic cloves, minced
- 3 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 bay leaf
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp ground fennel (optional for Kashmiri style)
- Salt to taste
- Fresh coriander leaves for garnish

Instructions
1. Prepare the Potatoes
- Boil the baby potatoes in salted water until tender but still firm. Drain and peel them.
- Prick the potatoes with a fork to allow the spices to penetrate, then lightly fry them in a pan with 1-2 tbsp oil until they’re golden. Set aside.
2. Prepare the Gravy
- In a large pan or kadhai, heat oil over medium heat. Add cumin seeds and bay leaf, and let them sizzle.
- Add chopped onions and sauté until golden brown.
- Add ginger and garlic, and cook until fragrant.
- Add pureed tomatoes and cook until the oil starts separating from the mixture.
- Add turmeric, red chili powder, coriander powder, and salt. Cook for a few more minutes.
3. Add Potatoes and Simmer
- Add the fried potatoes to the pan and mix them well with the spice mixture.
- Lower the heat and add the whisked yogurt gradually, stirring continuously to prevent curdling.
- Add about 1/2 cup of water (or more if you want a thinner gravy), cover the pan, and let it simmer on low heat for 15-20 minutes. This allows the potatoes to absorb the flavors.
4. Finish with Spices and Garnish
- Add garam masala and ground fennel (if using) and stir well.
- Garnish with fresh coriander leaves.
Serve
Serve hot with naan, roti, or rice. Dum Aloo pairs well with other Indian dishes and makes a great addition to a festive meal!
