Dum Aloo is a delicious and flavorful potato-based curry dish, popular in North Indian and Kashmiri cuisine. Potatoes are cooked slowly (or “dum”) in a rich, spicy gravy, resulting in tender potatoes that soak up the flavorful sauce. Here’s a basic recipe for Dum Aloo:


Ingredients

  • 12-15 small baby potatoes (or medium potatoes, peeled and cubed)
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup plain yogurt, whisked
  • 2-3 green chilies, slit
  • 1-inch ginger piece, grated
  • 3-4 garlic cloves, minced
  • 3 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp ground fennel (optional for Kashmiri style)
  • Salt to taste

Instructions

1. Prepare the Potatoes

  1. Boil the baby potatoes in salted water until tender but still firm. Drain and peel them.
  2. Prick the potatoes with a fork to allow the spices to penetrate, then lightly fry them in a pan with 1-2 tbsp oil until they’re golden. Set aside.

2. Prepare the Gravy

  1. In a large pan or kadhai, heat oil over medium heat. Add cumin seeds and bay leaf, and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger and garlic, and cook until fragrant.
  4. Add pureed tomatoes and cook until the oil starts separating from the mixture.
  5. Add turmeric, red chili powder, coriander powder, and salt. Cook for a few more minutes.

3. Add Potatoes and Simmer

  1. Add the fried potatoes to the pan and mix them well with the spice mixture.
  2. Lower the heat and add the whisked yogurt gradually, stirring continuously to prevent curdling.
  3. Add about 1/2 cup of water (or more if you want a thinner gravy), cover the pan, and let it simmer on low heat for 15-20 minutes. This allows the potatoes to absorb the flavors.

4. Finish with Spices and Garnish

  1. Add garam masala and ground fennel (if using) and stir well.
  2. Garnish with fresh coriander leaves.

Serve

Serve hot with naan, roti, or rice. Dum Aloo pairs well with other Indian dishes and makes a great addition to a festive meal!
