Ingredients:
- 1 sheet of puff pastry (store-bought or homemade)
- 1 (10 oz) package of frozen spinach (thawed and drained)
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste

Instructions:

- Assemble the Puffs:
- Fold the corners of each puff pastry square toward the center, overlapping slightly to form a pocket or triangle shape.
- Press the edges together to seal. You can use a fork to crimp the edges for a decorative touch.
- Egg Wash (Optional):
- Beat the egg and brush it lightly over the top of each puff for a golden, shiny finish.
- Bake:
- Arrange the spinach puffs on the prepared baking sheet and bake for 15–20 minutes or until golden brown and puffed up.
- Serve: Let the puffs cool slightly before serving. They can be enjoyed warm or at room temperature.
